You know what everybody likes? Pancakes. They're so darn good, and SUPER easy to make at home! Whip yourself up a big stack after that long Sunday ride and replenish all those carbs you were using to crush that KOM you picked off! These bad boys have a little panache with the use of bananas and hemp hearts, there's also no added sweeteners to the mix, so you don't have to feel as bad about the syrupy goodness you slather atop the glorious mound of cake-y goodness! The hemp will also provide you with some awesome Omega fatty acids and a full compliment of 9 essential amino acids! BUT WAIT! You don't know how to make pancakes!? Fear not-- for the #Fuel2Rule team is here! Le'ts break this down, first off is whatcha need!
Dry Stuff
1 c unbleached flour (or blend your fave GF flours!)
2 tsp baking powder
2 tbsp ground up Hemp Hearts
li'l pinch of salt Wet Stuff
1 ripe banana, super-mashed
2 tbsp ground flax
1 1/4 c almond/cashew/whatever mylk
1 tbsp Apple Cider Vinegar Extraaaaas!
More bananas, to put it on top
Some good ol' maple syrup
Hemp Hearts
Some frozen fruits (I like Mangoes or Blueberries) Now, how to do it: Take all the dry ingredients, mix em' together in a big bowl. Use a fork or something so you get rid of any lumpy bits of baking powder (not so great to bite into when they remain intact...) Good job, you're doing great so far! Next step, mix all the liquid things together! I actually use my magic bullet to do this to make sure all the flax seeds get mulched properly and the banana is super smushed. Get your pan hot and ready on a medium/low setting, I use non-stick pans with a light dab (~1tsp) of oil on it. You can do what you need though. Mix your wet ingredients into the dry bowl. Mix it all up, it should fizzle a little bit as the apple cider vinegar reacts wth the baking powder. This helps keep them pancakes nice and fluffy! (happy days!) Once you've mixed it all up, start pouring dollops of 'pancake sized' portions on the pan. Let it spread a little bit, and perhaps encourage the circle-ness by rotating the pan a bit. Make sure they still have a few cm of thickness to them! Now-- don't touch them until the edges start to firm up, and the little bubbles start popping on top and becoming little Sarlac Pits (WATCH OUT LUKE!!). Now it's time to flaunt those flashy spatula skills, or your amazing pan flipping skills and get that delicious cake in your pan flipped out! The B side generally only takes minute or so, and some impatient checking under the corners will help you decide when sufficient browning has occurred. Stack 'em up as they come off the pan, and once your stack is sufficient, drown the little hot cakes in sweet syrupy good ness and top with a few more hemp hearts and fruit for good measure! BOOM! Carb loading (or re-loading) is now complete! Congrats, you're a pancake WIZARD!
